As u probably know, carbs turn into sugar. So if u are starting to eat more carby foods, your blood sugar could definitely be spiking & then crashing. I’d be more concerned about your vitamin levels with some of the other symptoms you described. I think I remember u saying that your labs have been good. But do me a favor. Get copies of all your labs since surgery & compare them. If you see any trends up or down, that’s a red flag. I have a lab tracker worksheet if you would like me to send it.
